Ingredients

Method

  1. Wash the radish tops thoroughly.
  2. Fry the onion, then add the potatoes.
  3. Cover with water, cook for 15 minutes, then add the radish tops for 3 minutes.
  4. Blend until smooth and season.

Nutritional benefits

Radish tops are rich in fibre, vitamin C and antioxidants, and far too often thrown away: cooking them cuts food waste and is nutritious. The potato gives creaminess without cream. A light, budget-friendly, eco-friendly green soup, ideal for weight loss. Naturally vegan and gluten-free.

Variations and substitutions

  • With carrot or beetroot tops.
  • Creamier: add soft cheese or coconut milk.
  • More protein: red lentils.
  • With herbs: chervil, parsley.

Storage and making ahead

Keeps for 3 days. Blend straight after cooking to keep the green colour.

💡 Good to know

Wash the tops very well (they are often gritty) and cook them briefly: they keep their colour and nutrients.
