Ingredients
Method
- Soften the onion, then add the potato and the sweetcorn.
- Cover with water or stock and cook for 15 minutes.
- Blend with the milk (keep back a little whole sweetcorn).
- Season with nutmeg.
Nutritional benefits
Sweetcorn provides carbohydrate, fibre and a natural sweetness, while the potato gives a smooth, creamy texture without any cream. Because the soup is finished with milk rather than cream, this corn chowder stays light while still being rich and comforting. A colourful velouté that children love. Naturally gluten-free.
Variations and substitutions
- Made with coconut milk (vegan version).
- With roasted peppers.
- Spicier: add chilli or smoked paprika.
- With diced chicken for a complete meal.
Storage and making ahead
Keeps for 3 days and can be frozen. Reheat gently.
💡 Good to know
Keep some of the sweetcorn whole after blending: the soup is creamy but still has some bite and colour.
