- Mix the spelt and the roasted vegetables.

Nutritional benefits
Spelt is an ancient grain rich in fibre, plant protein and minerals (magnesium, iron), with a moderate glycaemic index: it keeps you full for a long time. Combined with a variety of roasted vegetables, a source of fibre and antioxidants, and olive oil, it makes a complete, balanced salad. A good way to vary pasta and rice while stocking up on fibre.
Variations and substitutions
- With bulgur wheat, barley or quinoa (the latter is gluten-free).
- More protein: chickpeas, feta or hard-boiled egg.
- With herbs and seeds for crunch.
- With sun-dried tomatoes and olives for a Mediterranean note.
Storage and make-ahead
This salad keeps for 3 days in the fridge and is ideal for a lunchbox: the flavours blend over time. The spelt and roasted vegetables can be prepared ahead (batch cooking) for quick lunches.
💡 Good to know
Roast the vegetables until they caramelise slightly: that is what gives the salad all its depth of flavour. Spelt can be cooked ahead and keeps for several days.
