The Breton galette in a homemade, filled version: a batter made from buckwheat flour, naturally gluten-free, folded over an egg, vegetables or cheese. Inexpensive, rustic and complete, it is a comforting meal that can be varied endlessly depending on what is left in the fridge.

Ingredients

Method

  1. Mix the buckwheat flour, egg, water and salt until you have a runny batter. Leave to rest for 30 minutes if possible.
  2. Heat a lightly oiled frying pan and pour in a ladleful of batter, spreading it thinly.
  3. When the galette is cooked underneath, break an egg into the centre and add the filling.
  4. Fold in the edges, let the white set and serve straight away.

Nutritional benefits

Despite its French name meaning “black wheat”, buckwheat is not a cereal and contains no gluten: it is an excellent base for people with gluten intolerance. Rich in fibre, magnesium and good-quality plant protein (with useful amino acids such as lysine), it has a lower glycaemic index than white flour. Filled with an egg and vegetables, the galette becomes a complete, balanced meal combining complex carbohydrate, protein and micronutrients.

Variations and substitutions

  • Complete: egg, ham (or mushrooms), cheese.
  • Vegetarian: spinach, goat’s cheese and walnuts; or ratatouille.
  • Vegan: vegetable and hummus filling, no egg.
  • Sweet: almond butter and banana for dessert.

Storage and making ahead

Plain galettes keep for 3 days in the fridge, separated by baking paper, and can be frozen. Reheat them in a frying pan, then fill just before serving. The raw batter keeps for 1 day in the fridge.

💡 Good to know

Resting the batter (ideally for a few hours) makes the galettes more supple and easier to spread. A very hot, barely oiled pan is the key to stopping them sticking.
