Ingredients

Method

  1. Lay a sage leaf and a slice of ham on each escalope.
  2. Brown them ham side down in the oil.
  3. Turn over and cook for another 3 minutes.
  4. Deglaze with the white wine and spoon the sauce over.

Nutritional benefits

Turkey is one of the leanest meats, very high in protein for few calories, ideal for weight loss and low-carb eating. The cured ham and sage add flavour without weighing the dish down. A fine, high-protein and light Italian dish, naturally gluten-free, to serve with vegetables.

Variations and substitutions

  • With veal (the traditional version).
  • With chicken.
  • With spinach on the side.
  • Alcohol-free: deglaze with stock.

Storage and making ahead

Best fresh; keeps for 2 days and reheats gently.

💡 Good to know

Start cooking ham side down so that it turns crisp and sticks to the escalope.
