Ingredients
- 500 g of beef (rump steak)
- 400 g of mushrooms
- 2 onions
- 200 g of Greek yoghurt
- 1 tbsp mustard
- 1 tbsp paprika
Method
- Sear the beef strips over a high heat, then set aside.
- Soften the onions and mushrooms.
- Add the mustard and paprika.
- Off the heat, stir in the yoghurt and return the beef to the pan.
Nutritional benefits
Lean beef provides quality protein and iron, while mushrooms bring fibre and B vitamins for few calories. By replacing the cream with Greek yoghurt, this Stroganoff keeps its smoothness while cutting the fat and gaining protein. Naturally gluten-free.
Variations and substitutions
- With chicken or turkey.
- With mixed mushrooms.
- Served with rice, wholewheat pasta or mash.
- Lactose-free: use plant-based cream.
Storage and making ahead
Keeps for 2 days; reheat gently without boiling (the yoghurt would split).
💡 Good to know
Add the yoghurt off the heat and do not boil it again: the sauce stays creamy and smooth.
