Ingredients
- 25 cl milk
- 15 cl cream (whipping)
- 2 g agar-agar
- 30 g sugar
- 1 vanilla pod
- 150 g red berries
Method
- Heat the milk, cream, sugar and vanilla.
- Add the agar-agar and boil for 1 minute, whisking.
- Pour into glasses and leave to set for 2 hours in the fridge.
- Blend the red berries into a coulis and spoon over just before serving.
Nutritional benefits
By replacing much of the cream with milk and using agar-agar (a plant-based gelling agent), you get a panna cotta with half the fat. The red berry coulis adds freshness, vitamins and antioxidants. Gluten-free.
Variations and substitutions
- With coconut milk (vegan).
- Mango coulis or caramel.
- With coffee or matcha tea.
- Even lighter (all milk).
Storage and making ahead
Keeps for 3 days in the fridge; add the coulis at the last moment.
💡 Good to know
Agar-agar must boil for at least 1 minute to set: without this boil, the panna cotta will not set.
