Nutritional benefits

Kidney beans are an excellent source of plant protein, fibre and iron, with a low glycaemic index. Indian spices (turmeric, ginger, garam masala) add an anti-inflammatory touch. A complete, filling plant-based curry that is economical and naturally gluten-free.

Variations and substitutions

  • With coconut milk for extra creaminess.
  • With spinach added at the end of cooking.
  • Spicier: add fresh chilli.
  • With chickpeas instead of kidney beans.

Storage and making ahead

Keeps for 4 days and freezes well; even better reheated. Excellent for batch cooking.

💡 Good to know

Mash some of the beans into the sauce: it thickens and becomes creamier, like a proper Indian rajma.
