Ingredients
- 2 chicken breasts
- 1 heart of cos lettuce
- 150 g plain yoghurt
- 2 tbsp Parmesan
- 1 tsp mustard
- 1 lemon
Method
- Grill the chicken and cut it into strips.
- Make the dressing: yoghurt, Parmesan, mustard, lemon juice, garlic.
- Arrange the lettuce and chicken on plates.
- Drizzle with the dressing and sprinkle with Parmesan.
Nutritional benefits
Chicken provides lean, very filling protein for few calories. The yoghurt dressing replaces the mayonnaise and cream of a classic Caesar, cutting the calories while keeping the creaminess. A high-protein, fresh main-course salad that is much lighter.
Variations and substitutions
- With wholemeal bread croutons.
- With hard-boiled eggs or anchovies.
- With salmon or prawns.
- With extra Parmesan shavings.
Storage and making ahead
Keep the dressing separate and assemble just before serving. The chicken keeps for 2 days.
💡 Good to know
A Caesar dressing made with Greek yoghurt is even creamier and higher in protein: try it for a creamy yet light result.
