Ingredients

Method

  1. Steam the leeks and drain them well.
  2. Wrap them in the slices of ham and lay them in a baking dish.
  3. Make a light white sauce (milk and flour, no butter) and pour it over.
  4. Sprinkle with cheese and bake for 20 minutes at 200°C.

Nutritional benefits

Leek is low in calories, high in fibre and a natural diuretic, which makes it ideal if you are watching your weight. Ham provides lean protein, and the butter-free white sauce keeps the dish light while retaining its creaminess. A comforting but balanced gratin.

Variations and substitutions

  • With turkey or chicken ham.
  • Vegetarian: no ham, with hard-boiled eggs.
  • Gluten-free: white sauce made with cornflour.
  • With chicory instead of leeks.

Storage and make-ahead

Keeps for 3 days and reheats in the oven. Can be prepared in advance.

💡 Good to know

Drain the leeks well after cooking (press them) to avoid a gratin that releases too much water.
