Tips

0.14 g of salt: this is what sets it apart from all cold meats. It is neither salted nor cured with nitrites, just minced. It is therefore a meat, and it does not count towards the 150 g a week guideline, which applies to processed products.

You control the seasoning, and that is the whole point. In a homemade stuffing, you decide on the salt, herbs and spices. A homemade stuffed tomato is incomparably less salty than a shop-bought sausage.

21.2 g of fat, however. Fat is essential to keep a stuffing moist. Cutting it with vegetables (onion, courgette, grated carrot) lightens the dish without drying it out. See onion, courgette and carrot.

It must be cooked right through. Like raw minced meat, the mincing multiplies the exposed surfaces. No pink versions, and eat it within 24 hours of buying.

An egg and some breadcrumbs, and the stuffing holds. One egg and two spoonfuls of soaked breadcrumbs hold in water and stop the stuffing falling apart during cooking.
