Ingredients

Method

  1. Cook the rice. Cut the beef and peppers into strips.
  2. Sear the beef over a high heat and set aside.
  3. Stir-fry the onion, garlic and peppers.
  4. Return the beef to the pan, add the soy sauce, toss for 1 minute and serve over the rice.

Nutritional benefits

Lean beef is rich in protein and haem iron, supporting muscle mass and energy. The peppers provide vitamin C (which helps iron absorption), fibre and antioxidants. The rice replenishes energy stores. A high-protein, colourful and restorative dinner.

Variations and substitutions

  • With chicken or prawns.
  • With brown rice for more fibre.
  • More vegetables: mushrooms, courgette, beansprouts.
  • Spicy: chilli, ginger, sesame oil.

Storage and making ahead

Keeps for 3 days and can be reheated in a frying pan. Ideal for meal prep.

💡 Good to know

Slice the beef thinly against the grain: it will be more tender after the quick cooking.
