Ingredients

Method

  1. Spoon a layer of Greek yoghurt into two glasses.
  2. Add a layer of granola, then some fruit.
  3. Repeat to make layers.
  4. Finish with fresh fruit and a drizzle of honey.

Nutritional benefits

This parfait ticks the boxes of a balanced breakfast: Greek yoghurt is rich in protein (fullness and muscle maintenance) and calcium, granola provides fibre and complex carbohydrate (especially if it is homemade and low in sugar), and fresh fruit provides vitamins, fibre and antioxidants. By controlling the granola and avoiding very sugary flavoured yoghurts, you get a healthy, satisfying and complete snack that children love in a glass.

Variations and substitutions

  • Dairy-free: plant-based yoghurt (soya, coconut).
  • More protein: skyr, or add chia seeds.
  • According to the season: peach, mango, pear, apple.
  • With a homemade compote between the layers.

Storage and making ahead

Best assembled when serving to keep the granola crunchy. You can prepare the ingredients ahead and put the parfait together in 2 minutes. For a takeaway version, add the granola just before eating.

💡 Good to know

Use a homemade granola to control the sugar, and choose plain Greek yoghurt or skyr to boost the protein with no added sugar. Seasonal fruit makes all the difference.
