Ingredients
Method
- Preheat the oven to 200 °C. Place the salmon fillets on baking paper, drizzle with olive oil and lemon juice, then season with salt and pepper.
- Bake for 15 to 18 minutes: the salmon should be cooked right through (opaque flesh that flakes easily).
- Meanwhile, cut the broccoli into florets and steam for 8 to 10 minutes to keep the crunch and the vitamins.
- Serve the salmon and broccoli together, sprinkled with dill.
Nutritional benefits
Salmon is one of the best sources of omega-3s (EPA/DHA), which are linked to normal heart function and a healthy blood fat profile: a plus in a cholesterol-friendly diet. During pregnancy, DHA contributes to your baby’s brain development, provided the fish is thoroughly cooked. Broccoli completes the dish with fibre, vitamin C, folate and protective compounds. High in protein (43 g per serving) and low in carbohydrate, this dish is both light and complete.
Variations and substitutions
- Another oily fish: mackerel, trout or fresh sardines.
- More carbohydrate: add brown rice or steamed potatoes.
- Vegetables of your choice: green beans, spinach or courgettes.
- Marinade: lemon, garlic and herbs for 15 minutes before cooking.
Storage and making ahead
Cooked salmon keeps for 2 days in the fridge and is delicious cold, flaked into a salad. Broccoli reheats quickly in a steamer or frying pan.
💡 Good to know
Aim for 2 portions of oily fish a week for your heart. During pregnancy, make sure the fish is cooked through (flesh that flakes) and avoid smoked or raw salmon.
