Tips
A 30 g portion covers 29% of calcium needs. At 760 mg per 100 g, abondance is among the densest cheeses in the database. It takes about ten litres of milk to make a kilo of cheese, and that concentration is what ends up on your plate.
2.19 µg of vitamin B12 per 100 g. Nearly 90% of the reference intake. Aged dairy products are an often underestimated source of B12, useful for people who eat little meat.
It is lactose-free, like all aged pressed cheeses. One hundred days of ageing is enough to break it down completely. This is rarely mentioned, yet it matters a great deal to many people.
Its real recipe is berthoud. Melted cheese with white wine and garlic, served on bread: a speciality of the Chablais that shows what the cheese becomes when heated, far better than a simple slice on a cheeseboard.
Raw milk. The AOP requires it, so it is not recommended for pregnant women or people with weakened immune systems, unless heated right through, which is exactly what berthoud does.
