Blinis

Blinis are small, thick Russian pancakes, traditionally made with buckwheat and raised with baker’s yeast. The industrial versions sold in France are generally made with wheat and are much richer.

Tips

11.5 g of fat: that is what sets them apart from bread. A country loaf has 1.3 g. Blinis are a fatty preparation, not a slice of bread.

One blini weighs 15 g: count 40 kcal. That is the useful unit. The problem is never the blini, it is what goes on top and how many you eat with drinks.

With smoked salmon, the salt adds up. 1.26 g of salt for the blini, plus that of the smoked salmon: a plate of canapés quickly reaches half the daily reference (see salt).

Homemade, they are much lighter. Flour, milk, egg, yeast and a barely greased pan: you cut out most of the added fat of the industrial versions.

Buckwheat changes the product. A blini made with real buckwheat is gluten-free, darker and more fragrant. Most shop-bought blinis contain only a tiny amount, or none at all: the ingredients list settles it.
