Nutritional benefits

Artichoke is low in calories, rich in fibre (notably inulin, a prebiotic) and has a reputation for supporting digestion and the liver. Fun to pull apart, it makes a sociable, detox starter. The homemade mustard vinaigrette adds flavour without excess fat. Naturally vegan and gluten-free.

Variations and substitutions

  • With a lemon vinaigrette.
  • With herb fromage frais for dipping.
  • With small raw purple artichokes.
  • With a yoghurt and mustard sauce.

Storing and preparing ahead

Cooked, they keep for 2 days in the fridge. The vinaigrette can be made ahead.

💡 Good to know

The artichoke is cooked when an outer leaf pulls away easily: do not overcook it, or it becomes stringy.
