Ingredients

Method

  1. Wash the vegetables and chop them roughly.
  2. Put everything in the blender with the oil, vinegar, salt and pepper.
  3. Blend until completely smooth.
  4. Chill for at least 1 hour in the fridge and serve well chilled.

Nutritional benefits

Gazpacho is one of the lightest and most hydrating meals there is: made of raw vegetables and water, it is very low in calories but rich in vitamin C, lycopene (the tomato antioxidant) and fibre. The olive oil adds healthy fats that improve lycopene absorption. With no cooking, it preserves as many vitamins as possible. Perfect for weight loss, or simply for getting plenty of vegetables in hot weather.

Variations and substitutions

  • More substantial: serve with diced vegetables, croutons or a hard-boiled egg.
  • Green: a cucumber, avocado and herb version.
  • With watermelon for a summery sweet-and-savoury touch.
  • Spicier: chilli, onion, cumin.

Storage and making ahead

Gazpacho keeps for 2 to 3 days in the fridge and is even better after a few hours of rest in the cold, giving the flavours time to develop. Blend again or shake before serving.

💡 Good to know

Use really ripe, flavourful tomatoes: this is the key to a good gazpacho. Serve it very cold, with a few ice cubes on scorching days if you like.
