For pan-fried aubergine, cut it into 2 cm cubes and brown for 10 to 12 minutes over a medium-high heat with just 2 tablespoons of olive oil, with the lid on for the first 5 minutes so that it cooks without soaking up all the oil.

Ingredients

Method

  1. Cut the aubergines into 2 cm cubes.
  2. Heat the oil in a large frying pan, add the cubes and cover for 5 minutes over a medium heat.
  3. Remove the lid, turn up the heat and brown for 5 to 7 minutes, stirring.
  4. Add the chopped garlic and parsley at the end of cooking, then season with salt and pepper.

Nutritional highlights

Aubergine is very low in calories, under 30 kcal per 100 g cooked according to Ciqual, but its spongy flesh readily absorbs fat. The lid steams it before it browns: this is what allows you to limit yourself to two spoonfuls of oil for four people.

Variations and substitutions

  • With tomatoes and basil.
  • With cumin and coriander.
  • With chickpeas for a complete meal.
  • With soy sauce and sesame.

Storage and making ahead

Keeps for 3 days in the fridge; eat it hot, or cold in a salad.

💡 Good to know

Cut even cubes and do not overfill the pan: packed too tightly, they release their water and boil instead of browning.
