Ingredients

Method

  1. Halve the peppers and remove the seeds.
  2. Fry the onion and beef, then mix with the part-cooked rice and half of the tomatoes.
  3. Fill the peppers and cover with the rest of the tomatoes.
  4. Sprinkle with cheese and bake for 40 minutes at 180 °C.

Nutritional benefits

Peppers are very rich in vitamin C and antioxidants for few calories. Combined with beef (protein, iron) and rice (carbohydrate), they make a complete, balanced dish in a single container. Naturally gluten-free.

Variations and substitutions

  • Vegetarian stuffing (lentils, quinoa).
  • With quinoa instead of rice.
  • With turkey mince.
  • Tex-Mex style (kidney beans, spices).

Storage and making ahead

Keep for 3 days and reheat in the oven; they freeze well.

💡 Good to know

Part-cook the rice first: in the stuffing it will finish cooking as it absorbs the tomato juices and stay soft.
