Nutritional benefits

Red cabbage is rich in vitamin C and antioxidant anthocyanins, and low in calories. Braised with apples (which sweeten it naturally) and a little vinegar, it becomes tender and tasty with no added fat or sugar. A light, colourful and original winter side dish. Naturally vegan and gluten-free.

Variations and substitutions

  • With chestnuts for a more indulgent version.
  • With raisins.
  • With red wine (traditional version).
  • With spices: cloves, juniper berries.

Storage and making ahead

Even better reheated; keeps for 4 days and can be frozen.

💡 Good to know

The vinegar fixes the bright red colour of the cabbage: without it, it turns blue-purple when cooked.
