Ingredients
Method
- Sauté the diced courgette.
- Beat the eggs with the milk, flour and cheese.
- Add the courgette and cherry tomatoes.
- Pour into a dish and bake for 35 minutes at 180°C.
Nutritional benefits
The eggs and milk provide complete protein and calcium, while the vegetables add fibre, vitamins and volume for few calories. Lighter than a quiche (no buttery pastry), this savoury clafoutis is a balanced, practical dish that travels well and can be eaten cold.
Variations and substitutions
- With peppers, broccoli or spinach.
- With feta or goat’s cheese.
- Gluten-free: cornflour instead of flour.
- With ham for a higher-protein version.
Storage and making ahead
Keeps for 3 days and can be eaten cold: ideal for picnics or lunchboxes.
💡 Good to know
Sauté the courgette first so it releases its water: the clafoutis holds together better and does not turn soggy.
