Ingredients
- 400 g plain flour
- 20 cl milk
- 1 sachet dried yeast
- 40 g caster sugar
- 30 g butter
- 2 tbsp cinnamon
- 60 g fromage frais
Method
- Knead the flour, lukewarm milk, yeast, sugar and butter, then leave to rise for 1 hour.
- Roll out the dough and sprinkle with cinnamon and a little sugar.
- Roll up, cut into slices and arrange in a dish, then leave to rise for 30 minutes.
- Bake for 20 minutes at 180 °C and top with a fromage frais icing.
Nutritional benefits
Made at home, cinnamon rolls contain far less sugar and butter than the shop-chain versions. A fromage frais icing replaces the classic, very fatty cream cheese frosting. Cinnamon is intensely aromatic, which lets you cut back on sugar. Enjoy warm, as a treat.
Variations and swaps
- With apples.
- Semi-wholemeal flour.
- Lemon icing.
- With raisins and pecans.
Storage and making ahead
Best warm on the day; reheat for 15 seconds in the microwave. They freeze well.
💡 Good to know
Cut the rolls with dental floss or a length of thread rather than a knife: they keep their round shape without being squashed.
Do you use cinnamon every day? Choose Ceylon cinnamon, which is lower in coumarin: cinnamon, what is a safe amount.
