- 250 g soba noodles
- 2 carrots
- 1 pepper
- 200 g broccoli
- 3 tbsp soy sauce
- 1 tsp ginger
- 2 cloves of garlic
Method
- Cook the soba noodles according to the instructions, drain and set aside.

Nutritional benefits
Soba noodles are made from buckwheat, which gives them more protein and fibre than ordinary wheat noodles, and a lower glycaemic index. Quick stir-frying over a high heat keeps the vegetables crunchy and preserves their vitamins and antioxidants. With little fat and a controlled amount of soy sauce, it is a light, complete and tasty plant-based dish, a far cry from the greasy, salty ready-made stir-fries.
Variations and substitutions
- More protein: add tofu, edamame beans or prawns (not vegan).
- Gluten-free: check that the soba are 100% buckwheat, or use rice noodles.
- Other vegetables: cabbage, mushrooms, mange tout, courgette.
- Spicier: sriracha, sesame oil, crushed peanuts.
Storage and making ahead
This stir-fry keeps for 2 to 3 days in the fridge and can be enjoyed hot or cold as a noodle salad. Reheat quickly in a frying pan. Handy for lunchboxes.
