Ingredients

Method

  1. Cook the chicken breast with the cumin and paprika, then slice it thinly.
  2. Fill one half of each tortilla with chicken, sliced avocado, tomato and cheese.
  3. Fold the tortilla over and brown it for 2 to 3 minutes on each side in a dry frying pan.
  4. Cut into wedges and serve with a salad.

Nutritional benefits

These quesadillas offer a good balance: the chicken provides filling lean protein, the avocado healthy fats and fibre, and the cheese calcium. Made at home, you control the amount of cheese and add vegetables (tomato, avocado), which makes it a far more balanced meal than a fast-food dish. A wholemeal tortilla increases the fibre even more.

Variations and substitutions

  • Vegetarian: replace the chicken with black beans.
  • Wholemeal or corn tortilla (gluten-free).
  • More vegetables: pepper, red onion, spinach.
  • Spicy: chilli, jalapeños, salsa.

Storage and make-ahead

Quesadillas are best eaten just browned, when really crisp. You can prepare the filling (cooked chicken) ahead and assemble at mealtime. Reheat in a frying pan rather than the microwave.

💡 Good to know

Cook the quesadillas in a very hot, dry frying pan (no fat): the melting cheese is enough to brown them and seal them. Press down lightly with a spatula for even contact.
