- 1 pinch of salt

- Fill as you like: fromage frais and fruit, or a savoury version.
Nutritional benefits
By adding protein powder and relying on eggs, these crêpes go from a carbohydrate-heavy breakfast to a balanced meal that is high in protein (20 g per serving), ideal for fullness and muscle recovery after exercise. The flour can be wholemeal for more fibre. Less sugary than traditional crêpes, they avoid the blood sugar spike and the energy slump that follows. A healthy base to fill sensibly.
Variations and substitutions
- Gluten-free: buckwheat flour or a gluten-free blend.
- Without protein powder: replace with blended oats.
- Savoury: fill with egg, ham, cheese, vegetables.
- Sweet: fromage frais, fruit, nut butter.
Storage and making ahead
The crêpes keep for 2 to 3 days in the fridge between sheets of baking paper, and they can be frozen. Reheat in a frying pan or in the microwave. Handy to make ahead for quick breakfasts.
💡 Good to know
Resting the batter gives softer crêpes. For an even higher-protein version without flour, simply blend oats, eggs, protein powder and milk.
