Ingredients
Method
- Marinate the diced chicken (lemon, garlic, oregano, oil) for 1 hour.
- Thread onto skewers.
- Grill for 10 to 12 minutes, turning them.
- Serve with tzatziki.
Nutritional benefits
Chicken provides plenty of lean protein for few calories, which is ideal for weight loss. The lemon, garlic and oregano marinade adds flavour without fat, and the tzatziki (yoghurt and cucumber) is a light accompaniment. Grilled rather than fried, souvlaki is a healthy, high-protein Greek dish, naturally gluten-free.
Variations and substitutions
- Use lean pork (traditional souvlaki).
- Alternate with vegetables (pepper, onion).
- In a pitta with raw vegetables (gyros).
- Use tofu for a vegetarian version.
Storing and preparing ahead
Marinated chicken keeps for 2 days; cooked, for 3 days. Ideal for a lunchbox.
💡 Good to know
A marinade of at least 1 hour with lemon and oregano tenderises and flavours the chicken: it is the basis of souvlaki.
