- 2 tbsp of walnut oil
- 1 tbsp of vinegar

Nutritional benefits
Chicory is very low in calories and rich in fibre and water, ideal for weight loss. Walnuts provide healthy fats that support heart health, the apple adds freshness, and the blue cheese brings flavour and some calcium (in a small amount). A balanced winter salad that plays on the contrast of bitter, sweet and salty.
Variations and substitutions
- With Roquefort, Gorgonzola or Comté.
- With pears instead of apple.
- With hazelnuts.
- Vegan: leave out the cheese and add more walnuts.
Storage and making ahead
Dress just before serving so the chicory stays crunchy. Keeps for 1 day.
💡 Good to know
Choose very white chicory with yellow tips: it is less bitter than heads whose tips have turned green in the light.
