Ingredients

Method

  1. Blind-bake the pastry for 15 minutes at 180 °C.
  2. Heat the cream and pour it over the chocolate broken into pieces, stirring until you have a smooth ganache.
  3. Stir in the butter, then the beaten egg.
  4. Pour into the pastry case and chill for 2 hours.

Nutritional benefits

Dark chocolate (70% and above) provides magnesium and antioxidants, and its intensity means a small slice is enough. With no added sugar in the ganache, the dessert stays under control on the carbohydrate front.

Variations and substitutions

  • Made with milk chocolate for children.
  • With a pinch of flaky sea salt.
  • Flavoured with orange or coffee.
  • On a speculoos biscuit base.

Storage and making ahead

Keeps for 3 days in the fridge; take it out 15 minutes before serving so it is melting.

💡 Good to know

Choose a good 70% dark chocolate: it makes all the difference, and there is no need to add sugar.
