Ingredients

Method

  1. Roll out the pastry into a tin and prick the base with a fork.
  2. Peel the apples, slice them thinly and arrange them in a rosette.
  3. Sprinkle with sugar and cinnamon, then dot with small knobs of butter.
  4. Bake for 35 minutes at 180 °C until the apples are golden.

Nutritional benefits

Apples provide fibre and pectin for very few calories, and cooking them means you can cut down on added sugar. Using really ripe apples and a thin layer of pastry gives a treat that is indulgent but sensible. Cinnamon adds aroma without any calories.

Variations and substitutions

  • Lighter version: filo pastry instead of shortcrust.
  • With pears.
  • With a layer of homemade apple compote at the bottom of the tart.
  • Tarte Tatin (caramelised and turned out upside down).

Storage and making ahead

Keeps for 2 to 3 days at room temperature under a tea towel, or in the fridge. Best served warm.

💡 Good to know

You do not need much sugar: choose really ripe apples (Golden Delicious, Reine des Reinettes) and let them caramelise slightly in the oven.
