Nutritional benefits
A sensible slice of thin tart stays light because the topping is mostly tomatoes, which are rich in lycopene and vitamin C. Mustard adds punch without fat, and olive oil provides healthy fats. A simple, sociable dish, best served with a salad for balance.
Variations and substitutions
- With courgettes or Mediterranean vegetables.
- With wholemeal shortcrust pastry for more fibre.
- With goat’s cheese or feta.
- With multicoloured cherry tomatoes.
Storage and make-ahead
Best warm on the day; keeps for 2 days and can be reheated in the oven to crisp it up.
💡 Good to know
The layer of mustard under the tomatoes does two things: it adds flavour and absorbs moisture, which prevents a soggy base.
