Ingredients
- 200 g dark chocolate
- 100 g butter
- 3 eggs
- 80 g sugar
- 50 g plain flour
Method
- Melt the chocolate with the butter.
- Whisk the eggs with the sugar, then fold in the melted chocolate.
- Add the flour and mix just enough.
- Bake for 20 to 22 minutes at 180 °C: the centre should still wobble slightly.
Nutritional benefits
Dark chocolate provides antioxidants and magnesium. By limiting the sugar (the chocolate is enough) and watching the baking time, you get an indulgent fondant without excess. A thin slice is satisfying quickly thanks to its richness.
Variations and substitutions
- Flourless (extra fondant).
- With courgette or sweet potato purée to lighten it.
- With walnuts or hazelnuts.
- Individual molten puddings (half-baked).
Storage and making ahead
Even better the next day; keeps for 3 to 4 days under a cake dome, and freezes very well.
💡 Good to know
Slightly underbake it: take it out while the centre still wobbles and it will finish setting as it cools, staying fondant.
