Ingredients

Method

  1. Hard-boil the eggs and cut them in half.
  2. Mash the yolks with the yoghurt and mustard.
  3. Fill the whites with this mixture.
  4. Sprinkle with chives and paprika.

Nutritional benefits

Eggs are an excellent source of complete protein for few calories and carbohydrates, ideal if you follow a low-carb diet. By replacing the mayonnaise with Greek yoghurt, these devilled eggs are much lighter while staying creamy. A high-protein cold starter, fresh and sociable.

Variations and substitutions

  • With tuna mixed into the yolks.
  • With avocado instead of yoghurt.
  • With herbs: dill, parsley.
  • Spicier: add curry powder or chilli.

Storage and making ahead

Keep for 2 days in the fridge. Can be made ahead for drinks.

💡 Good to know

Greek yoghurt gives the creaminess of mayonnaise for much less fat: the base for truly light devilled eggs.
