Nutritional benefits

Chia seeds are rich in fibre, plant-based omega-3 and protein; on contact with liquid they form a filling gel. Mango provides vitamin C and a natural sweetness that limits the need for added sugar. A healthy breakfast or dessert, ready with no cooking and prepared in advance.

Variations and substitutions

  • With berries, banana or passion fruit.
  • With coconut milk for extra indulgence.
  • With cocoa for a chocolate version.
  • Without the syrup for a version with no added sugar.

Storage and making ahead

Keeps for 3 days in the fridge: prepare several portions in advance for the week.

💡 Good to know

Stir the pudding 10 minutes after making it: this stops the chia seeds clumping at the bottom and gives an even texture.
