Ingredients
- 3 sweet potatoes
- 2 tbsp of olive oil
- 1 tsp of paprika
- salt, pepper
Method
- Cut the sweet potatoes into even sticks.
- Coat them in oil, paprika, salt and pepper.
- Spread out in a single layer on a baking tray.
- Bake for 30 minutes at 200°C, turning halfway through.
Nutritional benefits
Sweet potato provides complex carbohydrate with a moderate glycaemic index, fibre and plenty of antioxidant beta-carotene. Baked with a little oil rather than deep-fried, these fries are much lighter than classic chips while staying indulgent. Naturally vegan and gluten-free.
Variations and substitutions
- With spices: cumin, curry powder, herbs.
- With mixed vegetable fries (carrot, parsnip).
- With a yoghurt and herb dip.
- With Parmesan (not vegan).
Storage and making ahead
Best straight from the oven; they soften as they cool. Reheat in the oven to crisp them up.
💡 Good to know
Spread the fries out so they do not touch and do not overcrowd the tray: that is what makes them brown instead of steaming.
