Cooking drives off water: protein and minerals become more concentrated in 100 g of cooked food, without the portion itself containing any more.

Ingredients

Method

  1. Cut the potatoes into wedges (with the skin on).
  2. Coat them with the olive oil, garlic, herbs, salt and pepper.
  3. Spread them in a single layer on a baking tray.
  4. Roast for 40 minutes at 200 °C, turning halfway through.

Nutritional benefits

Baked rather than fried, potatoes absorb almost no fat: you keep the crispness for far fewer calories than chips. With the skin on, they retain fibre, potassium and vitamin C. A healthy, filling side dish.

Variations and swaps

  • With smoked paprika.
  • With sweet potato wedges.
  • Baby potato style (whole).
  • With Parmesan and rosemary.

Storage and making ahead

Keep for 3 days in the fridge; reheat in the oven to bring back the crispness.

💡 Good to know

Spread them out in a single layer without overlapping: packed too tightly, they steam and do not brown. Space is what makes them crisp.
