Ingredients
- 25 cl water
- 100 g butter
- 150 g plain flour
- 4 eggs
- 1 pinch of salt
- 100 g dark chocolate
- vanilla ice cream
Method
- Bring the water, butter and salt to the boil, add the flour all at once and beat until the dough dries out.
- Off the heat, beat in the eggs one at a time.
- Pipe small choux buns and bake for 25 minutes at 180 °C without opening the oven.
- Fill with ice cream and pour over the melted chocolate.
Nutritional benefits
Choux pastry is lower in fat than puff pastry and contains no sugar. Profiteroles are still a rich dessert because of the filling and the chocolate sauce: enjoy a sensible portion on a special occasion. Dark chocolate keeps the sugar down.
Variations and swaps
- Filled with crème pâtissière (religieuses).
- With sorbet (lighter).
- Chouquettes (just sugared).
- With caramel sauce.
Storage and making ahead
Plain choux buns keep for 2 days and freeze well; fill them at the last moment.
💡 Good to know
Do not open the oven during baking: a sudden change in temperature makes the choux collapse. Wait until they are well browned and dry before opening it.
