Ingredients

Method

  1. Preheat the oven to 180 °C.
  2. Separate the cloves without peeling them: the skin is the « shirt » (chemise) in the French name.
  3. Place them in a small dish, drizzle with olive oil and sprinkle with thyme.
  4. Bake for 25 to 30 minutes, until they are tender when pierced with the tip of a knife.

Nutritional highlights

Roasted garlic loses its sharpness and becomes mild and sweet, so you can use plenty of it to flavour a dish without salt or sauce. It goes with roast meat, fish or vegetables, and can be spread on toasted bread instead of butter.

Variations and substitutions

  • Whole head with the top cut off, baked for 40 minutes.
  • With rosemary.
  • Mashed into a purée.
  • Mixed with soft cheese for a spread.

Storage and making ahead

Keeps for 5 days in the fridge in a jar, covered with oil.

💡 Good to know

Squeeze each clove between two fingers when it comes out of the oven: the pulp pops out of its skin by itself.
