Ingredients

Method

  1. Cut the aubergine into slices and roast them in the oven.
  2. Hard-boil the eggs.
  3. Spread the pitta with hummus.
  4. Fill with aubergine, egg, tomato and tahini sauce.

Nutritional benefits

Sabich combines protein (egg, chickpea hummus) and good fats (tahini), with roasted (not fried) aubergine for fibre. A complete, filling vegetarian sandwich, far more nourishing and balanced than a standard one. Wholemeal pitta boosts the fibre content.

Variations and substitutions

  • Gluten-free: serve as a bowl instead of in a pitta.
  • With a yoghurt and herb sauce.
  • With assorted raw vegetables: cabbage, cucumber.
  • Spicier: harissa, chilli.

Storage and making ahead

Assemble just before serving; the components can be prepared up to 3 days ahead.

💡 Good to know

Roast the aubergine slices in the oven rather than frying them: you keep the soft texture that is typical of sabich while making the sandwich much lighter.
