💡 Good to know
Leave it to marinate for 15 minutes: the raw beetroot and carrot soften and soak up the dressing.
Good to know: in 2014, unexplained cases of collective food poisoning linked to grated raw beetroot led Anses (the French food safety agency) to suggest not serving it in school canteens or care homes. At home, for children or older people, choose cooked beetroot instead. Find out more: is raw beetroot dangerous?
