Nutritional benefits
Raw salmon is rich in protein and omega-3, which are good for the heart and for cholesterol. Prepared as a carpaccio (raw, with no cooking), it keeps all its nutrients. Low in carbohydrate, it is a delicate, light starter. For safety, use extra-fresh salmon that has been frozen beforehand.
Variations and substitutions
- With tuna or sea bream.
- With citrus fruit (orange, grapefruit).
- With chives or coriander.
- With capers.
Storage and making ahead
Eat straight away; make it at the last minute for freshness and safety.
💡 Good to know
Put the salmon in the freezer for 20 minutes before slicing: it is firmer and can be cut into very thin slices.
