Ingredients

Method

  1. Cut the cod into cubes.
  2. Pour over the lime juice and leave to marinate for 15 minutes (the flesh turns white).
  3. Add the red onion, chilli and coriander.
  4. Season with salt and serve straight away, well chilled.

Nutritional benefits

Cod is a source of lean protein that is very digestible and low in calories, ideal for weight loss and low-carb eating. ‘Cooked’ cold by the acidity of the lime, it keeps all its nutrients. It makes a fresh, light and invigorating starter. For safety, use extra-fresh fish that has been frozen beforehand.

Variations and substitutions

  • With sea bream, sea bass or salmon.
  • With mango or avocado.
  • With coconut milk (a milder version).
  • With sweetcorn and sweet potato (Peruvian style).

Storage and making ahead

Eat straight after marinating; make it at the last minute for safety.

💡 Good to know

For a safe ceviche, use extra-fresh fish that has been frozen for 24 hours beforehand, and do not leave it to marinate for too long (it would turn dry).
