Nutritional benefits
Salmon (fresh and smoked) is rich in protein and in omega-3 fats, which are good for the heart and for cholesterol. Fromage frais binds the rillettes with less fat than butter. Low in carbohydrate, this is a healthy, elegant spread for drinks. Serve it with crudités rather than bread for an even lighter bite.
Variations and substitutions
- With smoked trout.
- With Greek yoghurt instead of fromage frais.
- With chives or lime.
- With Espelette pepper.
Storage and making ahead
Keeps for 3 days in the fridge in a sealed container.
💡 Good to know
Keep some texture by flaking the salmon roughly: rillettes shouldn’t be a smooth purée.
