Fromage frais (spreadable cream cheese type)

Spreadable fromage frais is an unripened cheese enriched with cream, sold in a tub. Its smooth texture and mild taste make it an all-purpose product: on toast, in a sauce, as a filling, in a cheesecake.

Tips

It is closer to cream than to fromage blanc. 20.7 g of fat against 2.83 g for fromage blanc, for a comparable amount of protein. It is a common mix-up in the dairy aisle, and it changes everything for a tub eaten over a few days.

The reduced-fat versions keep their promises here. They come down to around half the fat, and the difference in taste is slight on toast or in a sauce, though much less convincing in baking, where fat gives structure.

It replaces crème fraîche in hot sauces. A tablespoon is enough to bind pasta or a fish dish, and it adds flavour where cream only adds fat. Always add it off the heat.

The salt shows up in use. 0.9 g per 100 g is moderate, but a generous spread easily carries 0.3 g. For a product eaten daily, that counts towards the total. See salt.

Herb versions are often saltier. Garlic and herbs, pepper, salmon: the seasoning adds salt and sometimes additives. A plain one with fresh chives works out cheaper and you control the amount.

Pregnant? This cheese is pasteurised in supermarkets; the risk comes mainly from the raw eggs in no-bake desserts. See our guide to cheesecake in pregnancy.
