Ingredients
- 2 ripe bananas
- 2 eggs
- 120 g rolled oats
- 150 ml milk or plant-based drink
- 1 tsp baking powder
- 1 pinch of cinnamon
Method
- Blend all the ingredients together until smooth, and leave to rest for 5 minutes.
- Heat the waffle iron and grease it lightly.
- Pour in a ladleful of batter and cook for 3 to 4 minutes, until the waffles are golden.
- Serve warm with fresh fruit, a little yoghurt or a touch of nut butter.
Nutritional benefits
These waffles replace the butter and sugar of classic recipes with the sweetness of banana (potassium) and the body of rolled oats, rich in fibre and complex carbohydrate. The result: a more filling breakfast or teatime treat with steadier energy, and far less fat and sugar than a traditional waffle. The eggs provide good-quality protein, and the whole thing is child-friendly. A weekend treat you can enjoy without guilt.
Variations and substitutions
- Gluten-free: use certified gluten-free oats.
- Higher in protein: add a scoop of protein powder.
- Extra indulgent: a few dark chocolate chips in the batter.
- Vegan: replace the eggs with 2 tbsp soaked chia seeds.
Storage and making ahead
These waffles keep for 2 days and freeze very well: reheat them in the toaster to bring back the crispness. Make a double batch for quick weekday breakfasts.
💡 Good to know
For really crisp waffles, cook them a little longer and do not stack them while hot (the steam makes them soft): lay them flat on a rack.
