Ingredients
- 24 sponge fingers
- 500 g strawberries
- 400 g fromage blanc
- 200 ml single cream
- 50 g sugar
- 3 leaves of gelatine
Method
- Line a mould with sponge fingers dipped in a light syrup.
- Soften the gelatine, then melt it in a little hot cream.
- Mix the fromage blanc, sugar, whipped cream and gelatine, then fold in diced strawberries.
- Pour into the mould, decorate with strawberries and chill overnight.
Nutritional benefits
The fromage blanc mousse replaces the heavy cream of traditional charlottes: you keep the softness for half the fat and more protein. With plenty of fresh strawberries, it is a light dessert rich in vitamins.
Variations and substitutions
- With raspberries or mixed red berries.
- With lemon.
- Quick version in small glasses.
- Gelatine-free (with mascarpone).
Storage and making ahead
Keeps for 2 days in the fridge; make it the day before so that it sets properly.
💡 Good to know
Always make it the day before: the gelatine needs a night to set the mousse firmly and allow a clean turn-out.
