Nutritional benefits

Black beans and quinoa combine complementary plant proteins with plenty of fibre, for a very filling, 100% plant-based chilli. The spices add flavour without calories, and the tomatoes provide lycopene. A complete, budget-friendly dish that is ideal for batch cooking.

Variations and substitutions

  • With kidney or pinto beans.
  • Spicier: chilli, chipotle.
  • With diced sweet potato.
  • As a filling for tacos or baked potatoes.

Storage and make-ahead

Even better reheated; keeps for 4 days and can be frozen. Excellent for batch cooking.

💡 Good to know

Let the quinoa cook directly in the chilli: it absorbs the flavours and thickens the dish naturally.
