Ingredients

Method

  1. Soften the onion, carrot and celery.
  2. Add the rinsed lentils and water.
  3. Add the sausages and simmer for 30 minutes.
  4. Slice the sausages and serve.

Nutritional benefits

Lentils are an excellent source of plant protein, fibre and iron, with a low glycaemic index. Combined with sausage (to be eaten in moderation), they make a complete, filling dish. To lighten it, choose a poultry sausage or use less.

Variations and substitutions

  • With poultry sausage (leaner).
  • Vegetarian: no sausage, with smoked tofu pieces.
  • With herbs: thyme, bay leaf.
  • With white wine in the stock.

Storage and making ahead

Keeps for 3 days and can be frozen: even better reheated. Excellent for batch cooking.

💡 Good to know

Prick the sausage before cooking it with the lentils: it flavours the dish without bursting.
