Ingredients

Method

  1. Soften the onion, then add the root vegetables and water.
  2. Cook for 25 minutes, then add the cabbage and sausages.
  3. Continue for 25 minutes.
  4. Serve the vegetables and sausage with a little of the broth.

Nutritional benefits

Cabbage and root vegetables provide fibre, vitamins and antioxidants for few calories, and the smoked poultry sausage adds protein (leaner than pork). By choosing lean meats, this hotpot remains a complete, filling winter dish without excess fat. Naturally gluten-free.

Variations and substitutions

  • Vegetarian: use white beans instead of the sausage.
  • With lean pork knuckle.
  • With lentils added.
  • With herbs: thyme, bay, cloves.

Storage and making ahead

Even better reheated; keeps for 4 days and can be frozen. Excellent for batch cooking.

💡 Good to know

Choose smoked poultry sausages rather than pork ones: you keep the smoky flavour while making the dish much lighter.
