Nutritional benefits
Chicken provides lean protein, while mushrooms and tomato bring fibre, vitamins and antioxidants (lycopene). Simmered in a wine and tomato sauce rather than a cream one, this dish stays light and balanced. The long cooking time makes it tender without any added fat. Naturally gluten-free and lactose-free.
Variations and substitutions
- With crayfish (the historic version).
- Alcohol-free: use chicken stock.
- With rice or wholewheat pasta.
- With herbs: thyme and bay.
Storage and making ahead
Even better reheated; keeps for 3 days and can be frozen. A good batch cooking dish.
💡 Good to know
Deglaze well with the white wine, scraping up the sticky bits from the bottom of the pan: this is where the flavour of the sauce is concentrated.
